Gluten-Free Mushroom Cornbread Stuffing Muffins

Welcome to another Thanksgiving-themed episode of Pintastic Recipes! In this week’s episode, we test a Mushroom Cornbread Stuffing Muffins recipe from JeanettesHealthyLiving.com. If you’re looking for a gluten-free stuffing alternative for your Thanksgiving feast, this could be a good option.

This dish smells amazing as it’s being cooked. As a result, Ryan and Charlene both had very high expectations going into the tasting. As it turns out, the final product came out a bit bland but the texture was perfect. Ryan and Charlene both agreed that, with a little tweaking of the seasoning (adding salt, pepper and even garlic), this dish has a lot of potential to be delicious in every way. Here are the official rankings:

Charlene: 3.5 / 5 Pins
Ryan: 3 / 5 Pins

Thanks so much for trying my recipe for these Stuffing Muffins. Appreciate your feedback. Seasoning is definitely a matter of personal taste, so I respect your opinions. Stuffing traditionally is served with gravy, which typically adds extra flavor on top of stuffing. Again, appreciate you taking the time to try this recipe. Always great to see folks cooking in the kitchen making real food!
